Leaning towards trucks in the first category. Also wondering if an F150 with the Heavy Duty Payload Package would suffice. It would be nice if it was easier to tell from a sale listing which trucks have that.

A less capable tow vehicle is going to be more work to drive and that adds up the further you tow with it.  You mentioned 12-14 hour trips -- to me that would call for a lot of overkill in towing capacity.

Are you towing on flat ground, or over high mountain passes?

We're based in Minnesota, so at least we don't have any major elevation challenges. Would like to make it out to High Plains in CO, but I believe that's pretty gradual.

Our lemons team has enough trouble keeping the race car going during the race weekends, and even the nearer race locations make for long and tiring weekends, so good point re: the advantages of having a plenty capable tow vehicle.

It took me 10 years, and me rescuing him with my SuperCrew eco boost F150, to get my friend to stop towing his 8000lb total enclosed trailer with a regular cab short box F150! He thought constant steering was a requirement while towing. Me towing his rig with one hand in a cross wind holding back to not go 80 sold him.

He now has an extended cab long bed long wheel base ( Super Crew long bed frame with shorter cab) crazy wheel base. Gets better mileage than my 2013 did and goes down the road great.

sounds a lot like our first couple times towing to races with borrowed, undersized pickups. Thanks to this forum we're figuring it out in less than 10 years, at least.
